Grilled Chicken Cranberry Almond Salad – Can the title be any longer?

A recipe for salad? Yes, a recipe for salad. I regard myself as the worst salad maker in the world, so I have tried to become more creative in my mixing of the greens. My favorite kinds of salads are the hearty ones that will make you feel like you had a nice light meal. None of this rabbit-food nonsense, it’s for the, well, rabbits. So I’ve been trying to be good and after looking through my cooking magazines, I was inspired to throw together some healthy things I had in my cupboard and fridge. It made for a great salad. Granted I had to hold back on drowning it with some yummy salad dressing, but it was still good nonetheless.

So here’s what I had. I think the picture explains it all. As far as the dressing is concerned, it’s totally store bought, and I am not ashamed.

You could probably guess that all I had to do was throw it all together, and pour on that vinaigrette.

It was really delicious and satisfying. It’s a great number for lunch. Great for weight loss competitions, if you happen to be in one, which in my case I am. Did I mention that I’m losing – the competition that is. Thus the salad. Enjoy.


Grilled Chicken Cranberry Almond Salad

Difficulty: Easy-Peasy                               Prep Time: 15 mins

Serving: 6

4 cups of salad spring mix                   2 cups roughly chopped romaine lettuce

2 Tbsp slivered almonds                     1/4 cup dried cranberries

2 grilled chicken breasts, cubed

raspberry-hazelnut vinaigrette for your dressing

Grill your chicken breast and cube. Toss all the ingredients together and add the vinaigrette when your ready to eat.
